Home Made Recipe Moin-Moin and How to Prepare it

One of the most communized Home Made Food in Nigeria is Moin-Moin, some call it Beans Cake. Moin-Moin is made with only a few ingredients like Beans, Red Onions, Pepper, Vegetable Groundnut Oil etc. But Beans is the main component that makes up the much loved Nigerian Home Made Moin-Moin which for long is a favorite to so many homes even as local diet mixed with other foods like Rice, Akamu, Bread. Moin-Moin is highly consumed by millions of Nigerians in both the urban and rural parts of the country. Interestingly, Home Made Foods like Moin-Moin is very simple to prepare and can be enjoyed for a personal meal or with the whole family on a round table dinner. Ingredients for Preparation of Moin-Moin include:

Grinded Beans
Vegetable Groundnut Oil (Please use Olive Oil instead)
Red Onions
Iodized Salt
Mashed or Seedily Pepper or Tatashe
Crayfish, Egg, Iced Fish (optional)
Water
Ground Nutmeg


Materials Needed for Preparation of Moin-Moin:




1/4inch Nylon (White color preferably) or get Local Leaves
Pot, Spoon
Gas or Electric Heater/Stove
A Sieve and a Knife


How to Prepare Moi-Moi Recipe

Blend the beans, tatashe or tomato puree, onions, crayfish, habanero pepper and ground nutmeg together with some of the water and pour the mix into a big enough bowl.

STEP 1:
  • Get the quantity of beans desired fit depending on the desired quantity of Moin-Moin you wish to prepare.
  • Next is to select the dirt, chaffs and falling peels or shells off from the beans and soak it in water for about 3hrs.

STEP 2:
  • Take the beans out of the water using a sieve (By now the shell backs on the beans can be easily removed with a little rub of the palms).
  • Next is to wash away all the peels and shell backs off from the beans carefully till the whitish color of the bean is visible.

STEP 3:
  • Pour the whole quantity of beans into a convenient basin.
  • Cut the desired quantity of Red Onions into the basin of beans but this will depend on the quantity of beans.
  • Cut the pepper likewise into the basin of beans (Mashed or Seedily Pepper).
  • Take it into a grinder machine to grind the beans before it’s completely dried.

STEP 4:
  • After it’s completely grinded, add some water if it too thick but be very mindful
  • Add salt and taste for satisfaction
  • Complement the taste with crayfish, boiled egg or iced fish if you have any otherwise you are already having your Moin-Moin recipe set.
  • Next is to turn the heat on your gas/electric stove on and put about 3-4 jugs of water into the pot and place the water on the heater to get heated above warm level.

Moimoi or Moin-Moin is a Nigerian steamed bean pudding made from a mixture of washed and peeled black-eyed peas, onions and fresh ground peppers. It is a protein-rich food that is a staple in Nigeria. Some adaptations also put apples in MoiMoi.

STEP 5:
  • Now is time to portion the Moin-Moin into the sizes you want, use a spoon and measure each desired portions into the 1/4inch nylon, do not forget to have either the boiled egg or steamed fish inside each portion. (The boiled egg and fish is optional)
  • Seal the nylon up by tying it up and dip into the boiling water and repeat this over and over till you have all of it dipped inside the pot and waiting to boil.
  • Keep a close watch of about 40-45mins and then turn the Moin-Moin sideways inside to allow get through on all sides.

Note: The local leaves is another exceptional wrapper for the Moin-Moin and it is much healthier but before it is dipped into the boiling water, it has a unique way of wrapping the leaves and its usage which cannot be described here on this post.
